Broccoli Cheese Soup

Don’t you hate it when you don’t have enough ingredients to slap dinner together? 

I have a back up solution for you. Keep these ingredients in your freezer and you can be ready at anytime to whip up some broccoli cheese soup. {Especially this Sunday when the deep freeze sets in.}

This recipe tastes very similar to the Panera soup recipe. Instead of using fresh broccoli, carrots and onion, I used frozen. Yes, there is such a thing as chopped up FROZEN onion. I seriously love this. Frozen chopped onions eliminate the running of the mascara

As far as the carrots go, frozen carrots do not come frozen in matchstick form, at least not at my store. BUT, the produce section has pre packs of such thing. So, you buy that and put it in a ziplock in the freezer….next to the 8 oz shredded cheddar, chopped onion and broccoli florets and whoop there it is. All of your ingredients in one frozen place!

The rest of the items you should have around, like butter, flour, milk and chicken stock.

Ingredients
  1. 1 TBS melted butter
  2. 1/4 cup chopped onion
  3. 1/4 cup melted butter
  4. 1/4 cup flour
  5. 2 cups milk or half & half
  6. 2 cups chicken stock
  7. 3 cups broccoli
  8. 1 cup matchstick carrots
  9. 1/4 tsp nutmeg (optional)
  10. 8 oz shredded cheddar cheese
  11. salt & pepper
Instructions
  1. 1.Saute the onion in the tablespoon of butter and set aside.
  2. 2.In a large pot, whisk 1/4 cup melted butter with the 1/4 cup of flour constantly for 3 minutes, whisk in 2 cups milk. Add chicken broth and cook for about ten minutes.
  3. 3.Add Broccoli, carrots and onion and simmer for about 25 minutes.
  4. 4.At this point, I put about 2 cups of the soup into my blender (with middle cap removed) and blended it so that the soup would be thicker but still have pieces in it. You do not have to do this step.
  5. 5. Add salt, pepper, nutmeg and stir. Keep heat low.
  6. 6. Add cheese and stir.
