Cool as a Cucumber Cocktail Recipe

Looking for a new summer cocktail to serve on the patio this weekend? Good news,  I’ve got a recipe for you! You don’t even have to like cucumbers to enjoy this drink, which I admit sounds crazy! I’m not a big fan of cucumbers, they’re fine if they’re chopped up in a salad or something but I don’t search them out. This drink is light, refreshing, not sugary or too cucumber-ey, just perfect for a hot summer night.

This is a vintage ice crusher from the 60’s! Depending on the mood, you could definitely release some tension by stabbing the crapola out of a bucket of ice.

I told KN that his Moscow Mule recipe was famous (you can find that here) but he needed to step up the draaanks game and create something new! {Preferably with vodka since I don’t like whiskey, bourbon or rum.} This little recipe gem is so light and refreshing that you can’t even tell that you’re drinking a cocktail, it’s like a spa drink but with alcohol, which could be problematic in the long run….

We stood in the kitchen with a host of ingredients and bottles. We literally tried using blueberries and lemons and all sorts of different mixtures of things. This one is simple and was our favorite combination!

Cucumber Cooler Cocktail

A refreshing, light tasting vodka drink!

  1. 3 oz Boyd & Blair Potato Vodka (awesome vodka!!)
  2. 2 oz Thatcher's Organic Artisan Cucumber Liqueur
  3. 6 oz Fever Tree Club Soda
  4. Cucumber Slices
  5. Ice
  1. Crush the ice, mix the liqueur and vodka in a glass first, add club soda last. Garnish with cucumber slices.
