Today I’m going with the trendy  Taco Tuesday theme! Here to answer the eternal question of “what is for dinner?” Every gosh darn day, right?  I’m telling you though, the only reason to fire up the grill doesn’t have to be burgers and steaks, these shrimp tacos are so easy and really, really delicious!! I’ve made them a few times, the first being for a backyard party we had where I made 3 different types of tacos and three different salsas as well. I spent days chopping and chopping! But for a regular weeknight dinner, no way all that is happening. These are so easy and require zero mess. 

To go with the shrimp tacos, I also made mango guacamole (which for a quick weeknight dinner you can buy pre-made) and creamy corn salad which is super easy and can be served warm or cold so you could make it in advance. I remain true to my easy, simple recipes….

I don’t know if you have ever tackled a mango. They aren’t the easiest thing to deal with. When KN asked if he could help, I said YES! How about you dice the mangos? I really wasn’t trying to stick it to him but boy I sure did. He had no idea and was pretty sure mangos were not worth the hassle. I looked over half way through and I’m like, dude, you need to peel it first! {The guac was delicious, so it was worth it!}

Grilled Shrimp Tacos

Serves 4
simple and easy grilled shrimp tacos

Ingredients
  1. 3 tablespoons fresh lime juice
  2. 3 tablespoons olive oil
  3. 5 tsp chipotle powder
  4. 1 tsp salt
  5. 1/2 tsp ground cumin
  6. 1 1/2 pounds peeled and deveined shrimp
  7. corn tortillas
Instructions
  1. Whisk ingredients together in a bowl, add shrimp and toss to combine. To grill the shrimp you can either use skewers or a grill pan. (We use a grill pan with the holes in it) Grill the shrimp on a preheated grill for about 5 minutes. Serve as is or chop the shrimp up into smaller pieces. Serve with warm or grilled corn tortillas, salsa, sliced avocado or guacamole and/or the creamy corn salad.

Creamy Corn Salad

Serves 4
Easy corn side dish also called Esquites

Ingredients
  1. 1 Tablespoon olive oil
  2. 16 oz package frozen corn
  3. 1 tsp sugar
  4. 2 Tablespoons canola mayo
  5. 1 Tablespoon fresh lime juice (1 lime)
  6. 1 tsp ancho chili powder
  7. 1/4 tsp ground coriander
  8. salt to taste
  9. 1/4 cup Cotija cheese
Instructions
  1. Heat a heavy skillet over med-high heat, swirl pan with olive oil. Add corn and sugar to pan and toss, then cook corn for 3 minutes without stirring until corn starts to brown. Stir and cook about 3 min more.
  2. While corn is cooking combine mayo, lime juice, chili powder, coriander and salt. Add to corn when it is done browning. Sprinkle with cheese. Serve warm or chilled. Can be served as a side but we like it right on the taco!
Notes
  1. I found Cotija cheese at one grocery store already finely grated and at another grocery store as a wedge. It is a mexican cheese found in the cheese area with other cheese like chihuahua and queso fresco.

Mango Guacamole

Ingredients
  1. 3/4 cup diced mango
  2. 1/4 cup finely chopped red onion
  3. 1/4 cup chopped cilantro
  4. 1 1/2 tablespoons orange juice
  5. 2 teaspoons lime juice
  6. 1/2 teaspoon salt
  7. 2 ripe avocados
  8. 1/2 finely chopped, seeded serrano chile pepper
  9. tortilla chips
Instructions
  1. combine all ingredients and serve!
Notes
  1. Mangos are hard to chop, if you can buy pre cut in the produce section that is much easier!
  2. I like to make one of the avocados chunks and smash the other one so you have a creamy and a chunky texture.
